Wanna make chinese food for dinner! Need suggestions and recipes.?

I wanna make my husband a nice dinner tonight. We have a crockpot/slow cooker, rice cooker, pots and pans (obviously), so no cooking method is out of the question. I would prefer not to fry anything in oil, because I always burn myself when I do. I would love to make something with chicken because we have a buncha chicken in the freezer I can thaw. I was thinking maybe something with rice, we havent had rice in a while. I dont want anything plain, and nothing real spicy. Lot to ask but I just cant decide on what to make for dinner. I would especially love a chinese type dish that we could eat wih chopsticks, we lovvve chinese food. I dont care if it takes all day to prepare, I wanna make an amazing dinner. I would love it even more if it involved an egg roll appetizer. Best answer gets the points. Thanks
